yummy (breakfast)
mentally the countdown is on.
we have one month from today before we return to school.
a collective 'we' for we all adjust and prepare.
i love both seasons -
the scheduled season (that's the school year)
and the carefree season (that's summer).
and the carefree season (that's summer).
as i look to the school year, i love ideas that make life smoother for all of us.
i love the idea of a few hours spent in the kitchen to give us more time at the table together.
here's a yummy breakfast that works well made ahead of time and enjoyed all school week long:
(yields 12 large muffins and about that many mini muffins)
1 lb breakfast sausage
3 cups bisquick
1 1/2 cups shredded cheddar cheese
1 can campbell's condensed cheese soup
3/4 cup water
preheat oven to 375.
cook sausage in skillet; stir til it crumbles and no longer pink.
drain and cool.
combine sausage, bisquick and shredded cheese in large bowl.
stir soup and water together in separate bowl.
make a well in the center of large bowl.
add soup mixture to large bowl.
still till all ingredients are moist.
spoon into lightly greased muffin pans.
bake for 20-25 minutes or lightly brown.
let cool then refrigerate.
pop in microwave and enjoy on those frantic school mornings.
